Delicious Homemade Guacamole from Scratch

A few weeks ago, we had a big family party where we celebrated two birthdays, our arrival to Georgia, our pregnancy, my cousin's visit from California and an anniversary! It was quite the shindig and my awesome aunt planned it all, assigning each of us a menu item for a Mexican-themed dinner. YUM! (This is one of the reasons we moved back home, so we could celebrate more with the ones we love most! Read our moving story here.) Kevin, my better half, was assigned the job of making the guacamole because he has become famous in the family for his amazing guacamole. He has quite the knack for seasoning meals, like his turkey ranch burgers that are just to die for! But his recipes are hard to duplicate because he never measures out anything, which is really funny to me because he has a Ph.D. in engineering and loves rules and organization. I guess no one is one-dimensional!

A delicious and super easy recipe for mouthwatering guacamole that's FULL of unexpected spices and flavor.

Ingredients

Scale
  • 4 ripe avocados
  • 3/4 cup sour cream
  • 4 medium garlic cloves, pressed or chopped (more if you REALLY like garlic, but put in this much first, then taste it after all the ingredients are added)
  • 1012 shakes of paprika (for body and flavor, does not add spice and you really can't put in too much)
  • 4 shakes of cumin (can make it spicy if you use too much)
  • 3 shakes of ground mustard (not too much, will add a strong flavor)
  • 1/2 lime or lemon
  • 5 shakes of onion powder (if the holes in the jar are big, more shakes if the holes in the jar are small)
  • 24 tablespoons fresh or dried cilantro to taste
  • 24 tablespoons fresh or dried chives to taste
  • 24 shakes of seasoned salt, taste, then add more if needed

Instructions

  1. Cut the avocado in half with a large knife. If the avocado you picked happens to not be perfectly ripe, hack the pit with the knife to remove it. Otherwise, the pit of a ripe avocado will fall out easily.
  2. Scoop out the meat from each avocado with a large spoon. If the meat isn't ripe enough, you might need to use a knife to mash it. Otherwise, use a fork and press into it, which easily mashes it. The consistency will be smooth if all the avocados are ripe, otherwise, there will be some chunks.
  3. Dump the rest of the ingredients in and stir with a fork.
  4. Serve with your favorite tortilla chips and you'll have a party appetizer that everyone will be standing around and will leave talking about!

How To Pick the Perfect Avocados

Avocados must be so ripe they are almost rotten, or it is impossible to remove the meat of it from the skin. Avoid the bright, shiny green ones. They look appetizing, but aren't anywhere near being ripe – they will take a week or more to ripen. Perfect avocados look rotten – they are brownish-black and are perfect if when you pick one up, your fingers easily leave a indentation. However, it should not look shriveled or shrunken, then it is too ripe.
