I used to think the only salad dressing worth eating was ranch dressing.  I would put ranch on everything from salads to french fries to pizza (oh boy!).  Once I decided to change my eating habits and switch to a real food diet, ranch dressing was out the door. The ingredients are deplorable, even in a “healthier” brand. And don't even think about low-fat ranch dressing. Vegetable oil, MSG and disodium guanylate are just a few of the colorful ingredients listed in Hidden Valley brand ranch.

The recipe I share below is a simple, creamy balsamic, but the base ingredients can be swapped to create infinite variations of other dressings.  Don't be afraid to try various combinations and come up with a new favorite salad dressing of your own.

Ingredients

Scale
  • 1/4 cup of paleo mayonnaise (see my simple recipe here)
  • 1/2 tsp of Italian dried herb blend (where to buy)
  • 2 tsp of high quality balsamic vinegar
  • 12 drops of dill essential oil for an extra burst of flavor (where to buy)

Instructions

  1. Mix all ingredients. Store in refrigerator for at least 5-10 minutes to allow the flavors to meld.

 

Some Notes and Tips to Make the Balsamic Salad Dressing Just Perfect!

Simple, right? The result is a delicious, creamy dressing that is the perfect consistency for any salad.  The balsamic vinegar adds the perfect tartness and sweetness at the same time. Lean in closer, here's my little secret…shhhh…I never actually measure the ingredients! I just add in enough balsamic to get the consistency that I'm looking for.

I always have the paleo mayonnaise on hand (it's so quick and simple to make) and then I can just whip up this balsamic salad dressing in about 60 seconds.  It's almost as simple as opening a bottle.  Almost. This dressing is the perfect opportunity to get your kids involved, and as you know, I love cooking with mine! They will love eating their greens if they know they created the delicious dressing themselves.

The mayo is really the base of the salad dressing with the added acid (balsamic) and herbs (Italian). Swap the acid and herb blend to create an entirely new dressing. Lemon juice and tarragon.  Red wine vinegar and basil (or even with basil essential oil – super easy!). The combinations are endless. This dressing is also wonderful as a sauce for proteins such as fish and chicken.  I love using a lemon juice and dill blend on baked salmon.
