Gluten-grain-junk free and missing that big box of sugary cereal? You’ve come to the right place. Here’s my absolute favorite new recipe for clean, tasty and healthy paleo cereal.
Sugar for Breakfast?
Crunch, crunch, crunch. Ahhh…cereal, how I’ve missed you. Growing up, cereal was my breakfast, and sometimes dinner, almost every day. Kix (with an extra spoonful or two of sugar), Captain Crunch (and subsequent mouth injuries from the crunch factor), Fruit Loops, and Coco Pebbles to name a few. So, basically, I ate a bowl of sugar every single morning not that I knew it, or cared, at the time.
Know better, do better
As an adult in the real food realm, I’ve come to realize that sugary cereals are not something that I want my family consuming. We know that sugar and processed carbohydrates dramatically spike our blood sugar and can lead to insulin resistance and even diabetes. It’s something I’ve steered clear of for many, many years. I was really craving a nice, crunchy cereal type food and decided to try my hand at a homemade cereal. It had to be simple, tasty, not full of sugar, and hold up to a bowl full of milk (like my delicious cashew milk) without immediately turning to mush. The recipe I’m sharing today fits the bill and I know your whole family will love it. Let’s get started.
- 2 cups Coconut flakes (large flake with no added sugar or other ingredients, organic is best)
- 2 tbsp Chia seeds
- 2 tbsp Pumpkin seeds
- 1/2 cup Dried berry mix (again, no added sugars or junk)
- 2 tbsp Maple syrup
- 1 tbsp Cinnamon (optional)
- 2 eggs, whites only (this helps the cereal to stick together a little and crisp up)
Mix all ingredients in a bowl (get the kiddos in on the action), spread on a parchment paper lined baking sheet and bake at 300 for 30-45 minutes. You’ll want to stay close to the oven and stir often. This will help the cereal dry out and prevent burning. I wanted my cereal really crispy so I baked it until it was a nice dark brown color. Let the cereal cool totally and then store in an air-tight container in the pantry.
This cereal is seriously so delicious! I really had to hold back from eating it for all three meals the next day. My toddler loved his first taste of cereal and my hubby used some of the cereal as a topping for yogurt. It has the perfect crunch from the coconut and some chewiness from the dehydrated fruits. It goes wonderfully with my easy, creamy cashew milk. I feel really good serving this to my family, although I still consider this a special treat since it does have some added sugar from the maple syrup.
