Healthy Couscous Veggie Burger Recipe

While couscous is very healthy it is not gluten-free.

Ingredients

  • 1/2 cup couscous
  • 3/4 cup boiling water
  • 1 can chickpeas
  • 1/4 cup red onion
  • 1 carrot, grated
  • 2 tbsp cilantro
  • 1 clove garlic
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 1 tbsp olive oil
  • 1 1/2 cups plain whole-milk Greek-style yogurt
  • 3/4 cup finely chopped cilantro
  • 4 1/2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons finely chopped garlic

Instructions

  1. Add boiling water to dry couscous in a bowl. Let sit for 5 minutes and then fluff with fork.
  2. Combine chickpeas, onion, grated carrot, cilantro, garlic, cumin, salt and pepper in food processor and pulse until smooth.
  3. Mix chickpea mixture with egg and couscous.
  4. Form into small patties.
  5. Heat pan at medium heat and cook patties in olive oil, turning after 3-4 minutes.
  6. Enjoy burgers on a bed of lettuce and tomato.
  7. Make a quick yogurt sauce topping to go with it using the yogurt, cilantro, lemon juice and garlic.
