Healthy Couscous Veggie Burger Recipe

While couscous is very healthy it is not gluten-free.

- 1/2 cup couscous
- 3/4 cup boiling water
- 1 can chickpeas
- 1/4 cup red onion
- 1 carrot, grated
- 2 tbsp cilantro
- 1 clove garlic
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 egg
- 1 tbsp olive oil
- 1 1/2 cups plain whole-milk Greek-style yogurt
- 3/4 cup finely chopped cilantro
- 4 1/2 tablespoons fresh lemon juice
- 1 1/2 teaspoons finely chopped garlic
- Add boiling water to dry couscous in a bowl. Let sit for 5 minutes and then fluff with fork.
- Combine chickpeas, onion, grated carrot, cilantro, garlic, cumin, salt and pepper in food processor and pulse until smooth.
- Mix chickpea mixture with egg and couscous.
- Form into small patties.
- Heat pan at medium heat and cook patties in olive oil, turning after 3-4 minutes.
- Enjoy burgers on a bed of lettuce and tomato.
- Make a quick yogurt sauce topping to go with it using the yogurt, cilantro, lemon juice and garlic.
