Sausages are one of those things in the grocery store that I'll get a hankering to buy maybe once or twice a year, but then never do once I read the ingredients and remind myself why I never buy it! Unhealthy meat full of nitrates and all the binders, fillers and preservatives just make them chemical, fatty concoctions that I don't even want to splurge on! Not to mention rumors of all the weird parts of the animal they throw in.

Making Your Own Sausage is Actually Easy!

Somehow, I never realized just how incredibly easy they are to make at home until I went on the GAPS diet to heal my lifelong problem with eczema, among other issues. It's a popular recipe on the diet and started off making them with way less spices. They needed an extra dose of personality, flavor and fun. I've been working on the recipe for about a month now and finally found the perfect combination of sugar, flavor and spice!

Very Simple Recipe for Spiced Honey Sausage

My local grocery store (Kroger) now sells grass-fed beef (GO KROGER! YAY!), plus we just bought a quarter of a cow from a local farmer, so I've got beef comin' out my ears, ya'll (ewww, that's a weird mental picture!). In my opinion, it's very important to buy the healthiest meat you can afford. Meat laced with antibiotics, hormones and grain fed from cows who are penned is just not natural or healthy. But it can be expensive which is why we are starting to buy our meat in bulk from local farmers. I also buy meat from Tropical Traditions as theirs is very high quality and grass-fed.

Quick Tip – Make a Large Batch and Freeze

I like to make these sausages into patties, place a piece of parchment paper in between each one, and freeze them. Then, on mornings when we want sausage, I just break a few off the frozen set and sauté it on the stove. I like mine a little medium to medium-rare, as it's healthier that way (frying the heck out of meat releases free-radicals!).

So, here's the easy recipe! I do usually double it when I want to freeze a batch.

Grass-Fed, Nitrate-Free Spiced Honey Sausage Recipe

Ingredients

  • 1 lb. ground nitrate-free meat (grass-fed is best) – pork or beef is the tastiest, but many like lamb, too (I buy mine here)
  • 1/2 tablespoon garlic powder (or freshly minced garlic)
  • 1 tbsp. dried or fresh oregano
  • 1 tbsp. onion powder (or 1/2 onion, very finely minced)
  • 1/2 tsp. pepper (add more if you want it spicy hot)
  • 2 tbsp. coconut oil, warmed to a liquid state (butter would also work fine, but I'm crazy about coconut oil. I buy mine here.)
  • 1 tbsp. raw honey, warmed (I buy this one)
  • 1 free range egg (not totally necessary, but helps it all to bind)
  • 1-2 teaspoons Celtic Sea Salt or Pink Himalayan Salt
  • Optional: 1/2 tbsp. turmeric (I throw this into nearly everything as it has anti inflammatory properties and adds body)

Mix all ingredients together in a bowl (I find it's easiest with my hands, even though it's messy). Form into thin patties and either sauté on the stove (I use a cast iron skillet as it is truly non-toxic) or prepare for freezing by placing a piece of parchment paper in between each patty. Enjoy with a side of homemade sauerkraut and your body will thank you for all the good fats and probiotics!

Yield: about 10-12 patties for 5-6 people
