Multigrain Wheat Bread Machine Recipe
This is one of the most delicious breads I have ever put into my hungry mouth. The combination of the multigrain cereal, whole wheat, and honey makes for one flavorful treat. My mouth is watering again just thinking about it! Each time I make it, the 1 lb. loaf is gone in a matter of minutes. Now I'll have to start doubling the recipe!
Ever since getting a bread machine for my birthday two months ago, I have been frustrated. Not a single loaf has turned out the way I wanted it to because they all collapse during the baking process and turn into dense rocks (see picture below). Most of them still taste delicious, but the density just destroys the experience. I have finally figured out the secret and now have successfully made the most perfect loaf of bread three times!
I made the bread using two gadgets that I just couldn't live without now that I'm into bread making! First is my West Bend Bread Machine – I love just dumping in all the ingredients, then enjoying the smell of homemade bread cooking for several hours, then voila! A gorgeous loaf of bread is born. I especially love that this machine is not expensive when it comes to bread machines – just $60 on Amazon! It's super easy to clean up afterward, too.
Next is my WonderMill Grain Mill – I can make flour out of rice, wheat, and any other type of grain, so I can literally make the freshest bread possible! My only complaint is that I can't make flour out of nuts like almonds. Boo. It is on the pricey side, about $260, but totally worth it if you will make bread from scratch again and again. Now, onto the recipe.
As I wrote earlier, I have found the secret to the perfect loaf after three tries on this one recipe and two months of trying different recipes. Here are the ones I used in this recipe, and all can be bought at the same time on Amazon (links below), saving you time and money (in case you don't already know, I LOVE Amazon and shop there all the time!):
- SECRET INGREDIENT: Xanthan Gum (gluten-free) or Vital Wheat Gluten (necessary for proper rising – all my breads have collapsed in the middle and been too dense without this!) Both of these ingredients add more protein to the bread.
- Bob's Red Mill Whole Grain 10 Grain Hot Cereal (basically, it's multigrain cereal that adds a nice punch of fiber and protein)
- Arrowhead Mills Organic Whole Grain Wheat or just regular whole wheat flour will do, also
- Bread Flour (regular flour doesn't have enough gluten for it to rise properly)
